I keep clicking the Combat Instructor, but I just keep getting the same thing over and over. 'to fight enemies, you need to click on them' etc etc. But I've equipped everything and I AM clicking on them...

Can you provide an Android APK directly to itch that doesn’t require Google Play Services? I specifically use itch.io to avoid that.
We have a version without Google Play Services here: https://mo.mo.ee/app.apk
Unfortunately this is not as up to date anymore, but once I will make a new version I will add it to itch.io.
